Special Recipe for Chitterlings and Greens

Chitterlings

Ingredients:
1-Medium White Potato
20-Pounds Chitterlings (2-10 lb Bags)
2-Large Hog Maws (Optional)
1-Larage Onion
I Tablespoon Vinegar (Light or Dark)
1- Tablespoon Garlic Salt or (to your taste)
Add Salt and Red Crushed Peppers (to your taste)

Take Chitterlings (frozen or unfrozen) out of plastic bag and place in large pot. Add enough water in pot to exceed height of Chitterlings. Bring to a boil. Pour off water. Again add enough water to exceed height of Chitterlings add ingredients to Chitterlings and cook over low heat for 4 hours. Occasionally check water height. May need to add water if water evaporates out. Ready-to-eat Serves 6-10 people

NOTE: If you use a Pressure Cooker cooking time 2 hours only. Cut off heat and wait 20 minutes before opening top.



Greens

Ingredients:
1-Bag of Greens
3-Cups Water or more
1-Tablespoon Bacon Fat with 3 slices of Bacon
Salt and Pepper to your taste
1-Tablespoon Sugar (optional)

For Hot and Spice Greens: Add 1 whole or 'A Jalapeno Pepper (Optional) Place Greens, Water and ingredients in. pot. Add Bacon and Grease Bring to a boil. Lower heat to a simmer for 2 'A hours occasionally check water level. May need to add water if water evaporates out.
Ready-to-eat Serves 4-6 people

NOTE: If you use a Pressure Cooker cooking time I hour only. Cut off heat and wait 20 minutes before opening top
