Special Recipe for Chitterlings and Greens

Chitterlings

Ingredients:
1-Medium White Potato
20-Pounds Chitterlings (2-10 lb Bags)
2-Large Hog Maws (Optional)
1-Larage Onion
I Tablespoon Vinegar (Light or Dark)
1- Tablespoon Garlic Salt or (to your taste)
Add Salt and Red Crushed Peppers (to your taste)

Take chitterlings (frozen or unfrozen) out of the plastic bag and place them in a large pot. Add enough water to exceed the height of the chitterlings. Bring to a boil. Pour off the water. Again, add enough water to exceed the height of the chitterlings. Add the ingredients to the chitterlings and cook over low heat for 4 hours. Occasionally check the water height. You may need to add water if the water evaporates out. Ready-to-eat. Serves 6-10 people.

NOTE: If you use a pressure cooker, the cooking time is 2 hours only. Cut off the heat and wait 20 minutes before opening the top.

Greens

Ingredients:
1-Bag of Greens
3-Cups Water or More
1-Tablespoon Bacon Fat with 3 Slices of Bacon
Salt and Pepper to Your Taste
1-Tablespoon Sugar (Optional)

For Hot and Spicy Greens: Add 1 whole or ‘A jalapeno pepper (optional). Place greens, water, and ingredients in a pot. Add bacon and grease. Bring to a boil. Lower heat to a simmer for 2 ‘A hours. Occasionally check the water level. You may need to add water if the water evaporates out.
Ready-to-eat. Serves 4-6 people.

NOTE: If you use a pressure cooker, the cooking time is only an hour. Cut off the heat and wait 20 minutes before opening the top.
